Cheeses made in the area around Rome are called romano. Those made form sheep’s milk are called pecorino romano (see Pecorino). Tangy caprino romano is made from goat’s milk, and mild vacchino romano is made from cow’s milk. In general, romanos are similar to Parmesan, but saltier and sharper in flavor.
