Annatto lends an amber hue to this dense-textured blue. Its sharp, spicy, potent flavor recalls a Stilton in disguise. Despite the name, it has no genuine tie to Shropshire. Instead, it was created in Scotland in the 1970s, and is now made in Nottinghamshire.
