This soft-ripened cheese, with its yellowish interior and pinkish orange rind, is from one of France’s premier winemaking regions, Burgundy’s Côte d’Or. During production, the cheese is repeatedly washed in brine, with a final washing in marc (French grappa), which imparts a pungent barnyard aroma and a strong flavor.
