Based outside the town of Petaluma, in Northern California’s Sonoma County, Achadinha is home to sixteen hundred goats. Owners Jim and Donna Pacheco maintain that natural aging in the fresh breezes of the Pacific makes the difference in their goat’s milk cheeses. Pressed, aged Capricious, with its sweet and mild taste, is the breakout star of the line.
