The artisanal cheeses of this Utah company showcase the milk of Jersey cows, who feed on alfalfa grown in the mineral-rich soil near the Great Salt Lake. The rind of Barely Buzzed is rubbed with ground coffee and crushed lavender, which impart caramel and butterscotch flavors tothe interior of the cheese. Beehive’s newest creation, SeaHive, is rubbed with local honey and with salt from a nearby ancient seabed.
