Founded in 1864, this well-established cheese cooperative produces a trio of premier artisanal cheeses. The cow’s milk Dorset is a gloriously buttery washed-rind cheese, and Pawlet, also made from cow’s milk, is an Italian-inspired toma, pressed and aged in hefty brown-rind wheels. Manchester is a rustic, aged raw goat’s milk cheese with an earthy taste and aroma.
