One of the first purveyors of chèvre in Vermont, Vermont Butter & Cheese is now a thriving producer of butter and of fresh and soft-ripened cheeses. Bijou is a soft-ripened goat’s milk cheese in the manner of a petite French crottin. Coupole uses the same recipe, but is formed into a striking dome shape. Both are creamy, sweet cheeses; Bijou is the morerobust of the two.
