This organic farm ages its cow’s and sheep’s milk cheeses in its own underground cave. Two of its sheep’s milk cheeses have received recognition: Autumn Oak is a smooth and creamy natural-rind cheese with a woodsy mushroom flavor. Vermont Brebis is a small,
soft-ripened wheel, with olive and mushroom notes and a luscious, runny texture when ripe.
