Here again, bringing together a cheese and wine from the same area can enhance the match. Hard aged cheeses with a little bite tend to pair well with red wines, and two red wines made in the same region as premier Parmigiano-Reggiano cheese are Chianti and Brunello, both from the Sangiovese grape. These rich, medium- to full-bodied wines tame the sharpness of the cheese, and the pleasantly salty cheese brings out the ripe fruit notes in the wine.
