If there’s one ingredient that’s used in pretty much every savory recipe throughout the book, it’s green onions. Many dishes benefit from using a lot of them, whether as final garnishes or as aromatics in the beginning. Green onion–infused oil, also known as pa-gi-rum in Korean, creates a nice savory foundation of flavors in many recipes. One of the reasons why Everyday Savory Chili Crisp is packed with umami is the green onion–infused oil. Since I go through so many green onions, I slice bundles of them and store them in an airtight container in the fridge. By doing so, I can easily use them for any purpose, from aromatics to final garnishes. One medium green onion, chopped, produces roughly 2 Tbsp.
