Copper kettles with rounded bottoms, designed to fit into candy stoves, greatly increase the efficiency of cooking. The copper conducts heat extremely well; the rounded bottom provides the maximum surface area for heat transfer; and the large surface area ensures the most rapid evaporation of water. Care must be taken not to cook anything in these untreated kettles that could react with the copper and form toxins.
