A simple method for applying color to molds is to brush the dissolved color or tempered chocolate directly into a mold. Any number of tools may be used to do this, resulting in different visual effects. Brushes, sponges, piping cones, and gloved fingertips all may be used successfully to introduce a contrasting color to the inside of a mold. The same tools may be used to splash or spray tempered color into a mold to create a dramatic, random appearance. When brushing colors or chocolate into molds, temper the cocoa butter or chocolate in order to provide shine and adhesion to the chocolate shell. Care must be exercised not to allow the chocolate or cocoa butter to set during brushing, which would result in a diminished shine and a flaking finish during unmolding.
