Fillings may be incorporated into handmade hard candy by several methods. The filling may simply be wrapped in a blanket of the hard-candy mixture while it is in a plastic state, to make a single filled log. The log may then be jacketed and stretched into a rope of the desired diameter, leaving a single tube of filling within the candy exterior. The rope may then be cut into sticks or pillows. Alternatively, the filling may be wrapped, as in the first method, and then the log repeatedly pulled and folded in half a number of times. In this way, a honeycomb of filling is created within the candy, resulting in a more delicate texture.
