Bitter Melon

Pale or dark green in colour, this melon is distinguished by the warty lumps all over the skin and a bitter flavour, apparently due to the presence of quinine. It is a favourite of southern Chinese, who stuff it with pork or stir-fry it with beef and fermented black beans.
