Whole soy beans fermented and preserved in salt and ginger, they are tangy and slightly bitter, but when combined with garlic and oil they become the famous black bean sauce used in a whole range of dishes. Some black beans are canned in brine but the dried ones, in polythene bags or cardboard containers, are by far the best.
