Cellophane or Glass Noodles, Transparent Vermicelli or Bean Threads

Made from mung beans, these are sold in a bundle tied by thin threads. Wiry and hard in their dry state, they have to be soaked in plenty of cold or warm water and drained before use. They provide a slippery texture but require robust seasonings.
