Edible tree fungi grown in large quantities in the western provinces of Sichuan and Yunnan. Sold dried, they are dark brown in colour, thin and brittle to the touch, and need to be soaked before use. They are used as an absorber of tastes while lending a slimy yet crunchy texture to other ingredients.
