A thin sauce made from fermented fish and salt, it has a distinctive flavour all of its own. Used as a dipping sauce or in marinades, it is part and parcel of Thai and Vietnamese cuisines, and is sold in bottles labelled nam pla or nuoc mam. The Chinese use it occasionally in their food.
