Red-in-Snow

Called xuelihong in Chinese, this is a mustard plant grown in eastern China which, being resistant to cold, can be seen sprouting up through the spring snows, hence the name. Cut up and preserved in salt, it is sold in cans with a misleading label of ‘pickled cabbage’.
