Tianjin cabbages (Chinese leaves), preserved in salt and garlic and cut up into small pieces, are sold in earthenware jars sealed with flax tissue paper. Salty, yet with a savoury-sweet taste, they are used as a seasoning to enhance the taste of other ingredients.
