Fresh water chestnuts are the walnut-sized corms of a sedge cultivated in swampy paddy fields or in muddy ponds. Washed and peeled, they are crisp, subtly sweet and are eaten raw. Canned water chestnuts, although less crisp and sweet, will provide a crunchy texture to vegetables and meat dishes.
