A wet or dry mixture containing salt and possibly other ingredients. Salt is the critical element. The word cure is sometimes used to denote sodium nitrite, sodium nitrate, potassium nitrite, or potassium nitrate. As a verb, cure means simply to subject to a cure for a period of time. Aging has a separate meaning. Cured meats can be aged, in which case temperature is not as important as in curing.
