A sodium nitrogen salt that is widely used in meat cures as well as in fertilizers and explosives. Because it is toxic, sodium nitrate should be used carefully, in small amounts, and should be mixed thoroughly with salt. Both federal and state agencies limit the use of sodium nitrate in commercial meats.
