Sodium Nitrite

A salt of nitrous acid that is widely used in meat cures. Because it is toxic, sodium nitrite should be used carefully, in small amounts, and should be mixed thoroughly with salt. Both federal and state agencies limit the use of sodium nitrate in commercial meats.
