A hard, cured pork sausage. The links are rusty-red because the ground pork is well seasoned with pimentón (aka hot paprika). These sausages are fatty and flavorful, which makes their juices ideal for sautéing vegetables. Chorizo is often sold in vacuum-sealed packages or in links at the deli counter.

Linguiça is a heavily flavored Portuguese sausage that is often used in Brazilian cooking. It is thinner and spicier than Spanish chorizo.
