Aged, strong-tasting, and somewhat hard and dry cheeses that are made from cow’s milk. Añejo cheese is the aged version of queso fresco. Cotija cheese is named for the town of Cotija, Michoacán, where it originated. Called “the Parmesan of Mexico,” they are ideal for grating.
