The more mature, ripened variety of the green plantain. The fruit gets sweeter and less starchy as it ages. Green plantains will ripen to yellow and then black in about a week sitting out on the counter.
To peel yellow or black plantains, cut off the ends and discard. With a paring knife, make 3 shallow slits lengthwise along the seams of the skin and peel away.
