Also called batata, white yam, and Cuban sweet potato. The boniato is a root vegetable grown in the Caribbean, with a flavor similar to that of a sweet potato, yet drier and starchier; the sweet white flesh has the essence of chestnut. It’s about the size of a turnip, with an outer thin skin that can be seen in a rainbow of colors, such as pink, purple, and red.
