There is quite a lot of confusion about these very popular cephalopods, related to the octopus. They come in many varieties which look very similar and share similar preparation and cooking methods. The differences between the varieties are more to do with size and shape than taste or texture. The totano seppia, or flying squid, is notable for its habit of leaping from the water and gliding for some distance. Found mostly off the Ligurian coast, it is treated in much the same way as other squid, but has coarser flesh.
