This is a strange fish that looks like a red mullet with a large head surrounded by bony scales and two very large fins just beneath the head. It lives in the sand on the seabed at various depths. There are several varieties which range from small to quite large, reaching up to 75 cm (2ยฝ feet) in length.
The flesh is very good, tender but not too firm. Cut into steaks, it can be grilled, but its best use is to flavour fish soups.
