This is a speciality of the Northern Italian lakes like Maggiore and Como. Fish from the lakes, like alborella and agoni, are hung to dry in the sun (see the picture). The dried fish is usually grilled until the skin swells, this is then removed and the fish served with some lemon juice or vinegar.
