The Italians like to fish this much-loved Mediterranean fish all year round; either it is cooked grilled with lemon juice and olive oil, or baked. The best variety is the Diplodus sargus which can reach 40 cm (16 in) in length and a weight of 2 kg (4ยฝ lb). White bream prefers rocky seabeds with plenty of vegetation.
