The eggs and milt of various fishes are delicacies in themselves. Eggs can be found in female fish and milt in male fish when approaching sexual maturity, and these are sold by only the very finest fishmongers.
Especially sought after are salted herring roes which are particularly popular in salads. Fresh herring roe has the same consistency as brains and has to be soaked and thoroughly cleaned before being fried in breadcrumbs.

Carp and mackerel roe is very tasty but the most delicate is that of sea bass. Grey mullet and tuna roe are both salted and air-cured to make bottarga.
