  • About

Battuto, meaning beaten, consists of lard, pancetta or ham mixed with flavourings like rosemary, garlic, onion and chilli until it resembles a fine creamy paste. It is used as a base for soup, stews or sauces or smeared on top of roasts to give extra flavour.
