I was once asked to test some unusual foreign foods for a London daily paper and one of the things I tried were rams’ testicles, a speciality of Iceland. I was reassured that it was not only the Italians who love to eat these private parts. Although not exactly a common food, the testicles of veal, lamb, mutton and bulls are eaten everywhere in Italy, but are mostly enjoyed in the north. In the south, however, they eat lambs’ testicles as part of an involtino. Otherwise they are usually thinly sliced and either grilled or fried. You need to ask the butcher to prepare them for you.
