This curious ham takes its name from the town of Chiavenna in Veltellina. It is made from the leg of a lamb or goat, seasoned with garlic, spiced with juniper berries and washed in red wine, then air-dried for a few months. It is called violino because in order to cut it the ham must be slung over the shoulder as if playing the violin.
