There are many varieties of palla di neve (snowball), the technical name given to this king of the cabbage family. In principle, it is the same as broccoli, except that the immaculate white florets which make up the head are extremely compact and heavy and surrounded by a few leaves whose freshness indicates the quality of the cauliflower. The most tender of the pale green leaves are also edible.

Cauliflowers are grown all over Italy, with the major growing regions being in Campania, the Marche, Puglia and Sicily. There are also many varieties, including Precoce Toscano, Gigante di Napoli and Tardivo di Fano. The cauliflower has a very long growing season and is available from October until the end of May.
