Known from antiquity, beans have been eaten through the ages by peasants because they were easy to cultivate and preserve. Today dried beans have become an increasingly important part of our diet and they are valued for their high protein, vitamin and mineral content as well as for their fibre. Every region in Italy can name at least one bean or pulse dish. See also Borlotto, Cannellino.
