One of the most annoying of weeds, nettles are nevertheless edible and enjoyable. There are various types, but the edible one is the common stinging nettle with a greenish white flower. It is essential that you wear gloves when you pick the tender spring tips. To stop them from stinging, put them in the refrigerator for a while, then boil them in slightly salted water for 5 minutes or until tender. You can then use them in a soup, or dress them with olive oil and lemon juice to serve as a vegetable. They may also be used in a risotto or instead of spinach as a filling for ravioli, mixed with ricotta, Parmesan and egg.
