Like the other larger zucca, zucchini also grow over the ground but are more bushy than other plants in the family. When buying them, try to get organically grown ones and try to buy them in season when their flavour is at its best. Courgettes are delicious when freshly picked, blanched and served dressed with a little melted butter and salt or extra-virgin olive oil and lemon juice.

Courgettes come in a huge range of shapes, colours and sizes, from the round, dark green Tonda di Nizza to the long, straight dark green Verde di Milano and from the common Striata di Italia or di Napoli to the pale green Bianca Sarda. What they all have in common though, is their flavour, which is almost exactly the same regardless of their outer appearance.
