Bavette or lingue di passero (sparrows’ tongues) is a long pasta like a thick flattened spaghetti, with an oval section rather than round, giving a lovely mellow sensation to the palate. Its shape makes it particularly good with pesto and seafood sauces. Smaller sizes are called bavettine, linguettine and linguette, while a Genovese version is called trenette and is almost exclusively eaten with pesto.
