Resembling long strands of blond hair, hence the name capelli d’angelo (angel’s hair), this long pasta is also known as fidelini or capellini and is the thinnest form of spaghetti you can find. It is a pasta which is at its best with delicate sauces, and with butter and Parmesan cheese, but it is also good in a light broth. It cooks very quickly so you will need to keep a close eye on the cooking time. There is also a black version, coloured with cuttlefish ink, which is mostly used with seafood sauces.
