Called maccheroni alla chitarra in Abruzzo, manfricoli in Umbria and tonnarelli in Lazio, this long pasta is much like spaghetti, except that it has a square rather than round section. It is made by laying a flat sheet of pasta over a special cutter made of many closely spaced steel wires called a chitarra. The sheet of pasta is pressed through the wires with a rolling pin. The thickness of the pasta is equal to the distance between the wires so that when it goes through the chitarra, it is cut into long square strands.
