These small pasta tubes are used in soups such as minestrone and for pasta e fagioli. They are available all over Italy and can be either ribbed (rigati) or smooth (lisci) on the outside. The size varies, with the larger variety being served with tomato sauce. Tubettini are the smallest of the range and are used in brodo.
