Risotto

This unique dish can be found in good Italian restaurants throughout the world. The appeal of risotto is that it can satisfy any palate, provided, of course, that it is made properly. It is no surprise that it is in the rice-growing regions of Piedmont, Lombardy and Veneto that the classic risotto dishes such as risotto with truffles or risotto with porcini have their origins. Other regions, such as Tuscany, Campania, Sicily - and even Sardinia - have contributed some tasty dishes to the genre, but they cannot equal the great northern dishes.
