Boleto Giallo, Pinaiolo

Even in dry weather, the cuticle (skin) of this fungus is always viscous and wet. It belongs also to the Boletus family and mainly grows in pine woods during the spring and autumn. It grows freely and can be found in large groups. The wet cuticle is a browny-purple colour and should be removed when the fungus is being prepared. The cap is about 12 cm (5 inches) in diameter, with yellow pores on the underside. The tubular stem is 8-10 cm (3-4 inches) high and whitish in colour. It also has a ring around it from the remains of the veil. It can be used in the same way as the boleto elegante, but is also good sautéed and in soups.
