The togetherness of a few flavours like herbs and spices is called aromi, being the equivalent of bouquet garni. A mazzetto di aromi or mazzetto odoroso usually consists of a mixed bunch of parsley, rosemary, sage, thyme, bay and sometimes marjoram, tied up in a bundle so that they may be easily discarded after use. Aromi are often sold in fruit and vegetable shops, and are used to enhance soups, sauces, marinades and stews.
