This curious plant (Armoracia rusticana) grows wild all over Italy during the summer. It is harvested for its pungent tap root late in the season so it can be kept through the winter. The strong leaves can be easily confused with those of the dock, and the thick root - which can grow up to 35 cm (18 inches) in length โ€” has to be dug out carefully to avoid breaking it. It is very hard and has be grated for use. When doing this, take care to wear glasses or goggles of some sort as the juices in the radish are very pungent and will irritate the eyes if they get into them.
