As everyone knows, honey is made by bees from the nectar of a variety of flowers and is the oldest sweetener known to mankind. Most honeys are made from the nectar of all the flowers within the range of the hives and these are called millefiori (thousand flowers). However, some honeys are made by bees who have collected nectar from only one type of flower. These are called monofloral (single-flower) and are generally more expensive than ordinary honeys and have more delicate aromas and flavours, reflecting the qualities of the flowers used.
