Oils are made by pressing fruit, seeds and nuts through a special press or extracted using a chemical process. In the past, oil production in Italy centred on olive oil, with the result that the country has gained the reputation for producing some of the finest quality olive oil in the world. However, many other oils are now produced in Italy, including arachidi (groundnut), semi di girasole (sunflower), semi di soya (soya), mandorle (almond), noci (walnut), nocciole (hazelnut), ravizzone (rape seed) and vinaccioli (grape seed).
